Ingredients:
Crumble the butter with the flour, then knead the dough with 110 ml ice-cold water and 1 pinch of salt and refrigerate for 2 hours. Slice 3 peeled apples and toss them in a mixture of 1 tbsp apple cider vinegar, 4 tbsp yoghurt, 1 tbsp flour, 2 sage leaves (chopped) and a small handful of fresh thyme leaves (or 1 tsp dried thyme from the shop).
Stretch out 2/3 of the dough and place in a lined pie dish (or pan), top with the yoghurt apple, crumble 150 g blue cheese over the top, the more adventurous can spoon a little waffle butter over the top (a couple of teaspoons), and meat lovers can sprinkle with pieces of smoked ham (e.g. black forest). Roll out the rest of the pastry, spread it on top of the ‘filling’, work the edges of the pastry that rolls up the sides, then brush with a beaten egg.
Place in a preheated oven at 180°C and bake, stirring the air, for about 35 minutes. Enjoy your meal!
