Banoffee Pie waffles with rosehip seed flour Dessert Vegetarian

Ingredients:

  • 160 g BL55 wheat flour
  • 40 g rosehip seed flour
  • 1/2 packet baking powder
  • 1/2 teaspoon cinnamon
  • 1 pinch of salt
  • 1/3 teaspoon ground nutmeg
  • 1 egg
  • 260 ml milk
  • vanilla extract
  • 55 g melted butter
  • 50 g granulated sugar
  • 2 packets (22 g) vanilla sugar
  • 150 g granulated sugar (for caramel sauce)
  • 260 ml warm 30% cream (for caramel sauce)
  • 1 pinch of salt (for caramel sauce)
  • 200 ml cold 30% whipping cream
  • 1 tablespoon sifted icing sugar (for whipped cream)
  • banana
  • walnuts

The quantities of the ingredients are given for 6 gorfis.

Mix the dry ingredients. Mix the flour with the baking powder, spices (cinnamon, nutmeg) and a pinch of salt. Separate the eggs in two and mix the yolks with the milk. Stir the vanilla extract into the milk. Whip the egg whites with the granulated and vanilla sugar. Melt the butter. Mix the flour mixture with the milk until lump-free, then with the butter, and finally fold in the egg whites. Bake them in a waffle iron. Place the finished waffles on a wire rack so that they can ventilate underneath and not soften from the moisture.

To make the caramel sauce, caramelise the granulated sugar over a low heat until all the sugar crystals have melted, then add the hot whipping cream in several batches, BEWARE, as it will foam up, while whisking continuously. Season to taste with salt, one or more pinches.

For the waffles, whisk 1 tablespoon of sifted icing sugar into a well-blended whisk and whisk until smooth.

Serve with banana rings, whipped cream, walnut pieces and caramel sauce.
