Chocolate-raisin apple stars with spiced walnut cream Dessert Gluten free Vegetarian

Ingredients:

  • 2 larger apples
  • 1 tbsp. lemon juice
  • 1 tbsp honey
  • 4 cubes of chocolate
  • 2 tbsp raisins (soaked in rum)
  • 5 tbsp pure walnut butter (for the cream)
  • 2 tbsp honey (for cream)
  • 1-1 knife-edge of ground cinnamon (for cream)
  • bourbon vanilla (for cream)
  • ground cardamom (for cream)
  • ground star anise (for cream)

Cut the apples in half, using a melon cutter, carefully cut out the core so that the apple does not fall out. Using a knife, form a star shape from the hollowed-out core. Mix the lemon juice with the honey and brush the surface of the apples with it. Place in a small baking pan, add 2 dl of water and roast in a preheated oven, covered, for 10 minutes. Then remove the lid and leave to brown slightly for 5 minutes, then return for a further 1-2 minutes, placing a cube of chocolate in the centre of each star. This way, when it melts, it will fill the stars.

When out of the oven, spread the apples with the cold-pressed walnut butter mixed with honey and spices. Fill the chocolate parts with the rum-soaked raisins. Serve hot or cold.
