Pickled radish with ginger Gluten free Quick Salat Vegan

Ingredients:

  • 500 g iceberg radishes
  • 500 gruyere – 500 ginger roots – 5 cm
  • 2 lemons
  • 25 g sugar
  • 1 tbsp pumpkin seed oil
  • 1 tsp. salt

Preparation:

Peel the radish, cut into julienned pieces.

Peel the ginger, grate finely, squeeze out the juice, mix with the sugar, the juice of the lemons and the finely grated rind of half a lemon, salt and mix with the radishes. Refrigerate for at least 4-6 hours before serving.

Drain and toss with pumpkin seed oil before serving.
