Whisk 25 g yeast in 2 dl lukewarm water, while mixing 400 g wheat flour with 150 g pumpkin seed flour, 3 dl water and 1 tbsp salt in a bowl.

Mustard seed flour pasta with tenderloin

Mustard flour is a pungent, ochre-yellow mustard seed flour similar to English mustard powder. Interestingly, the mustard seed oil is not at all pungent, while the flour is strong. The cooked pasta already loses much of its raw mustard flavour.

For the stuffing, I chopped the spring onions, grated the ginger and garlic, and then blended them with the venison mushrooms and kale in a food processor with a knife. I also added the soy sauce, salt and pepper. When the kale was in small pieces, I mixed it all together with the minced meat.
