Pumpkin seed flour scones

Pumpkin seed flour adds flavour, light colour, vegan protein and other nutrients to the well known Hungarian type of scones, and lowers their carbohydrate content.

Green focaccia

Whisk 25 g yeast in 2 dl lukewarm water, while mixing 400 g wheat flour with 150 g pumpkin seed flour, 3 dl water and 1 tbsp salt in a bowl.

Crumble the butter with the flour, then knead the dough by adding 55 g sugar, 2 tbsp cold water and 1 tbsp pomegranate balsamic vinegar. When the dough is ready, put it in the fridge for 2 hours.

I preheated the oven to 170 degrees, fan-assisted. I rolled out the dough (you just need to roll out the bolti ) and then brushed it with walnut oil.
