Horse bean cream with feta cheese

Ingredients:

-  1 kg fresh peeled horse beans
-  salt (to taste)
-  2 bigger tbsp sour cream
-  the green top of 2 spring onions
-  fresh ground pepper
-  a handful of parsley
-  100 g feta cheese

-  100 g feta cheese

Cook the horse beans in salty water (it needs to boil about 12 minutes) then pour away the water. Blend the beans with the sour cream, the pumpkin seed oil, the sunflower seed oil, the green parts of the spring onions and the parsley until it is smooth and creamy. Season it with fresh ground pepper and salt to taste.

 

Put it on toast, decorate it with some extra pumpkin seed oil, grind some feta cheese on top. (We prepared it with an other type of cheese but it works perfect with feta as well.)
